Store leftovers in an airtight container.Once candy topping has hardened slightly, cut into pieces and allow to harden completely before serving. Sprinkle crushed peppermint candies over the top and gently press into the white candy.(Candy will thicken quickly but should still be spreadable) If you are adding the peppermint extract, work quickly by whisking in the extract and immediately spreading the melted candy over the cooled brownies. While brownies are cooling, melt white candy melts according to package instructions.Bake for 18-20 minutes or until toothpick inserted in the center comes out clean.Stir until combined, Pour batter into prepared baking dish. Stir in cocoa powder until well blended.Add eggs one at a time, stirring well after each addition. Remove pan from heat and allow to cool for a few minutes. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, sugar, and brown sugar together on high speed until smooth and creamy, about 1 minute. Add in sugar and stir until sugar starts to dissolve. Line a 9×13-inch baking pan with parchment paper and lightly spray it with nonstick spray. In a large saucepan, melt butter over medium heat.Spray an 8x8 inch baking dish with non-stick cooking spray. Preheat oven to 350 degrees Fahrenheit.Heavy Cream: Buttermilk also works well in place of heavy cream.Vegetable Oil: Any non flavored oil, like canola oil, also works.Freezing: These brownies can be frozen in an airtight zip top freezer bag for up to 3 months.Storage: If there are any brownies left :), you can store them in an air tight container in the fridge for up to 4 days.They will continue to cook a bit when they come out of the oven. If it’s clean or ALMOST clean, take the brownies out. Start checking brownies about 5 minutes before instructed on the package (usually about 30 minutes).Hold the parchment paper to the sides of the pan using two clips (I use bag clips, see photo above). To make brownies easy to remove from the pan, line the pan with parchment paper.Sprinkle on candy cane pieces, if desired. Step 4: Bake 30-40 minutes until a toothpick comes out clean.
